Bulbashnik and other best mashed potato casseroles


Often there are situations when boiled potatoes or mashed potatoes are cooked in excess. Prudent housewives know how to turn them into a delicious dish. Mashed potato casseroles are so good that you should not be too lazy and make potatoes if the kitchen is not already cooked. In addition, the further preparation of an appetizing dish will not take much effort.

Potato casserole with cheese and eggs in a slow cooker

Composition:

  • potato - a kilogram;
  • sour cream - 200 ml;
  • chicken eggs - 3 pieces;
  • cheese - 200 g;
  • potato starch - 2 tablespoons.

Cooking method:

  1. Cut the fourth part from the prepared cheese and grate finely.
  2. Wash, peel, grate the potatoes and mix them with grated cheese. If there is already prepared mashed potatoes, then mix it with cheese.
  3. From the resulting cheese and potato mass, eggs, sour cream and starch, mash, mix them thoroughly. Do not forget to salt and season to taste. If you use ready-made mashed potatoes, be careful not to overdo it with salt.
  4. Put the potato-cheese mass in a slow cooker, grate the remaining cheese and sprinkle the mixture on top.
  5. To cook a casserole in a slow cooker you need to in the "Baking" mode. Set the timer for 40 minutes.

"Bulbashnik" in the oven

Composition:

  • potatoes - 6-8 tubers (about a kilogram);
  • butter "Peasant" - a quarter pack;
  • granular cottage cheese (it is undesirable to replace with a product with vegetable fats) - 250-300 g;
  • walnuts (can be replaced with peanuts, even salted) - 50 g;
  • onions - 1 small piece (up to 5 cm in diameter);
  • flour - a tablespoon with a slide;
  • breadcrumbs - approximately 100 g;
  • sour cream 20% - 50 ml;
  • chicken eggs - 3 pieces;
  • salt and seasonings to taste (preferably caraway and fennel).

Cooking method:

  1. Chop onion finely or mince or mince. You can grind it in any way - the main thing is that there are no large pieces.
  2. Peel, chop coarsely, fill with water, salt and boil the potatoes until soft. Drain excess water, cook mashed potatoes.
  3. Mix with onions and cool to a temperature slightly above room temperature.
  4. Break into a potato mass a couple of eggs, mix well, season. Divide in half.
  5. Sprinkle breadcrumbs in a baking dish, put half of the mashed potatoes on them, and even with a spoon.
  6. Grind nuts in a coffee grinder.
  7. Mix nuts with cottage cheese and sour cream.
  8. Spread the curd mass in a second layer.
  9. The third layer will be the remaining mashed potatoes.
  10. Beat the third egg in a bowl, grease the top layer with it.
  11. Bake in the oven at a temperature of about 180 degrees until a crust appears.

Potato casserole with minced meat (classic recipe)

Composition:

  • potatoes - 2 kilograms;
  • minced meat - a pound;
  • onions - a pair of onions;
  • chicken egg - a couple;
  • sour cream - half a glass;
  • vegetable oil - 50 ml;
  • salt, ground pepper - to your taste.

Cooking method:

  1. Boiled and peeled potatoes boil until soft.
  2. Mash the boiled potatoes, cool a little.
  3. Chop the onion, previously freeing it from the husk. You can do this in any way: using a blender, meat grinder, grater or knife.
  4. In a small amount of oil, lightly fry the onion until it acquires a pleasant golden hue.
  5. Add minced meat to the onion and continue to fry. At this stage, mincemeat does not hurt to salt and pepper.
  6. Separate the yolks from the proteins and mix with the cooled mashed potatoes.
  7. Put sour cream in potatoes and mix well.
  8. Divide the potato mass into two parts.
  9. Oil the mold and lay on it one part of the potato mass.
  10. Put the minced meat on top of the potatoes.
  11. Spread the remaining potatoes with the third layer.
  12. Send to the oven for half an hour.

After the casserole is cooked, do not rush to remove it from the stove, otherwise it will settle and lose its attractive appearance. To maintain splendor, it is enough for her to stand in the oven 10-15 minutes after turning off.

Potato casserole with sausages

Composition:

  • mashed potatoes (ready-made) - half a kilo;
  • sausages (sausages, ham, smoked or cooked sausage) - 250 g;
  • chicken egg - two pieces;
  • onions - one small head;
  • garlic - one clove;
  • processed cheese - one (about 80 g);
  • sour cream - the third part of a glass;
  • vegetable oil - 25 ml;
  • salt and seasoning to your liking.

Cooking method:

  1. Cut onion and garlic into small pieces, fry them in a small skillet.
  2. Dice or small sausages into cubes.
  3. Coarsely rub the cheese.
  4. Mix the eggs with sour cream.
  5. Put half the potatoes in a greased form.
  6. Lubricate with garlic and onion mass.
  7. Put the sausage slices on the potato.
  8. Sprinkle with cheese.
  9. Cover with a layer of potatoes.
  10. Top with a mixture of eggs and sour cream.
  11. Bake in the oven for 30 minutes or so until browned.

Potato casserole is much quicker to cook if done in the microwave.

Potato casserole with mushrooms and chicken breast

Composition:

  • ready-made mashed potatoes - kilograms;
  • chicken breast (filet without skin) - approximately 800 g;
  • fresh mushrooms (champignons are also suitable) - 400-500 g;
  • onions - 3 pieces;
  • butter - a quarter of a pack;
  • chicken egg - two pieces;
  • cheese - 300 g;
  • herbs, spices, salt - to taste;
  • oil for frying onions, mushrooms and poultry - as needed.

Cooking method:

  1. Cut the chicken into small pieces.
  2. Chop the onion finely.
  3. Cut the mushrooms into medium sized pieces.
  4. Sauté the onions, mushrooms, and chicken until cooked in vegetable oil.
  5. Mix all this with pre-cooked mashed potatoes.
  6. Add the egg, spices and chopped herbs, mix again.
  7. Lubricate the mold with butter, having melted it first. Put the potato mass in it.
  8. Put in the oven for 20 minutes.
  9. Grate coarsely cheese. Sprinkle them with a casserole and return the form to the oven.
  10. Bake another 10 minutes. Turn off the oven, after a quarter of an hour, remove and place on plates.

To prepare potato casseroles, you can use small portioned forms and serve directly in the table.

Potato casserole with fish

Composition:

  • mashed potatoes - a pound;
  • fish fillet - 250-300 g;
  • green peas and canned corn - half a glass each;
  • onions - one piece;
  • cream - 200 ml;
  • rice flour - a tablespoon;
  • sour cream - a large spoon;
  • salt and spices - at your discretion.

Cooking method:

  1. Cut the fillet into small pieces.
  2. Chop the onion finely.
  3. In the boiling cream, dip the fish, onions, season, salt and simmer for 5 minutes under the lid.
  4. Pour in rice flour and simmer until thickened.
  5. Mix with sour cream and finely chopped herbs.
  6. Put mashed potato mashed potatoes in a baking dish or coconut bowl with a thin layer.
  7. Arrange the fish with the sauce.
  8. Cover the fish layer with a layer of potatoes.
  9. Bake until tender crust appears.
  10. Sprinkle peas and corn on top, after which the dish can be served.
