Grapes Cabernet Sauvignon, or Cabernet Sauvignon, is very popular both in our country and among foreign consumers as a technical variety. This is the most famous grape variety in the world, which is widely used in the wine industry and in non-industrial winemaking. This variety of true gourmets is often called the real king of grapes.

Selection history

Grapes “Cabernet Sauvignon” appeared in the XVII century in the French province of Bordeaux, where it was obtained by crossing varieties “Cabernet Franc” and “Sauvignon Blanc”. For a very long period, the variety was the most cultivated and common. However, in 1990, it was replaced by Merlot grapes.

Grade characteristics

Cabernet Sauvignon is a late-ripening variety. This old winter-hardy and drought-resistant variety is widespread in many areas of viticulture. Also known under the names "Lafite", or "Lafet", as well as "Small Cabernet" and "Petit Cabernet."

Biological description

Cabernet Sauvignon bushes form sprawling shoots with characteristic leaves that are rounded in shape. Young shoots have a greenish, almost white color. There is a dense pubescence. Characterized by the presence of a serrated border of wine-red color.

Bisexual flowers. Neat, medium-sized clusters have a length of 12 to 15 cm and a width of 7-8 cm. The shape is cylindrical. A wing may sometimes be observed. The structure of the brush is loose. The average cluster weight does not exceed 73 g. The clusters are located on a long stalk.

Technical characteristics of berries

Berries Cabernet Sauvignon small size. The average diameter of the berry is from 13 to 15 cm. The shape is round. Covered with abundant wax coating. The main color of the berries is dark blue. The skin is coarse, relatively thick. Ripe juicy pulp with colorless juice. The taste is nightshade, but pleasant. The average berry weight rarely exceeds 1 g. The number of grape seed varies from 1 to 3. Sugar content is from 19% to 21%, acidity is 8-9 g / l.

Cabernet Sauvignon is deservedly popular and cultivated in the fields of Bulgaria, Italy, America, Argentina and Japan due to the large number of advantages of the variety:

  • resistant to phylloxera;
  • slightly affected by a bunch of grape leaves;
  • increased resistance to mildew;
  • resistant to gray rot;
  • suitable for the preparation of high-quality and popular vintage wines;
  • sufficient winter hardiness;
  • ideal taste indices;
  • high productivity;
  • productivity up to 60-90 c / ha.

Berries can hang on bushes for a very long time and are almost not subject to decay even in rainy seasons. However, partial or mass shedding of ovaries, as well as peeling, can sometimes be observed.

Features of planting and care

Before landing, it should be borne in mind that Cabernet Sauvignon is highly sensitive to soil. The landing site should be selected especially carefully. Also, when landing, the following must be considered:

  • planting dates do not differ from any other hybrids and grape varieties, which implies planting in early spring or mid-autumn;
  • it is preferable to plant grape seedlings on the southern slopes or at sufficient elevations;
  • when planting seedlings, the width between the rows should be 3-4 meters;
  • when growing berries for the preparation of fine wine should reduce the length of the fruit arrows and load indicators on the bushes;
  • it is important to shorten the annual type of shoots by 5 or 6 eyes.

It should be noted that even with overloading the bushes, the berries are capable of very high sugar accumulation.

Grapes Cabernet Sauvignon has a very rich and special, very tart taste, which gives the wine a hint of blackberry and a touch of ripe cherry. Additional hues can be expressed in tones resembling tobacco, licorice, black pepper, green olives, vanilla and violet.

Reviews of winegrowers

Cabernet Sauvignon grapes can be used only in winemaking, it is unsuitable for fresh consumption. This variety is not without reason considered to be a stronghold of wines from the most famous regions of Bordeaux - Medoc, Margot and Grava - and is desirable for most winemakers in different countries.

Experienced growers have already adapted to this rather picky and demanding variety. They recommend pruning the plant for 5-6 eyes. Very rarely, there are a couple of bunches on the lower segment of the fruit arrow. Most often they are single and not as large as those on the top.

Infertile shoots are practically not observed. The smallest clusters form on the knots of substitution. The practice of cultivating this variety shows that Cabernet Sauvignon, along with Cabernet Cortis, adapts very well to growing conditions on new lands, and adherence to agricultural technology allows achieving excellent results.
